Coconut Macaroons

Are you looking for something sweet, satisfying, homemade, and made with clean ingredients (i.e. paleo and primal approved)? These coconut macaroons are just what you are looking for. They are made from scratch with real food ingredients. Loaded with unsweetened shredded coconut for a good quality fat that will keep you satisfied. This recipe is super simple. This recipe comes from Primal Palate. Hayley and Bill are awesome and have created some amazing recipes. They also have an organic spice blend line that is perfect for many dishes. Their cookbook was the first paleo/primal cookbook we bought back in 2012. I highly recommend their book and their recipes. This is a simple dessert recipe that packs great flavor. This recipe comes from their book “Make it Paleo” page 368. Also they have 100’s of recipes on their website at primalpalate.com. Hope you guys enjoy.

  • 1 Vanilla Bean Pod (used in original recipe) or 2-3 tsp pure vanilla extract (used in this recipe)
  • 1/2 cup Pure Maple Syrup
  • 3 cup shredded Coconut
  • 6 Egg Whites

  1. Preheat oven to 325°F.
  2. Place egg whites in a kitchen mixer or use a handheld mixer and beat until stiff peaks form
  3. Fold in the maple syrup, shredded coconut, and vanilla beans.
  4. Form into 1-inch balls, and place on a parchment-lined baking sheet.
  5. Bake for 20 minutes, or until the edges get crispy and golden.
